Super-Nutritious Vanilla Chia Seed Pudding
Using coconut milk, this creamy and sweet vanilla chia seed pudding takes less than 5 minutes to prepare (win!) and packs a big nutritional punch! Nourish your body at breakfast with this simple recipe, or enjoy the chia pudding in the afternoon as a nutritious and filling snack topped with fruit.

Vanilla Chia Pudding Packs a Nutrition Punch:
As a dietitian, I get very excited about foods that pack a nutritional punch, which is why I have several healthy and wholesome recipes with chia seeds here on my site. And with 11 grams of filling, gut-friendly fibre and 10% of the daily value for both calcium and iron, this chia seed pudding recipe is definitely one to add to your rotation.

Easy as Pie – or Pudding?
To make it, just whisk the ingredients together and pop it in the fridge for a few hours (or overnight) to let the chia seeds do their thing (absorbing liquid is their thing!).
Tip: After placing the chia pudding in the fridge to set, give it a good stir approximately 1-2 hours later. This will help to prevent the seeds not setting properly, which can result in a more runny, soupy mixture.
Serve it with fresh fruit, granola for crunch, and maybe a nice drizzle of creamy homemade peanut butter.

Notes

Mine did not set up!
I’m sorry to hear that Diane! It could have been a variety of things.
– did you leave it in the fridge to set long enough?
– did you make sure to stir/shake everything together well before putting in the fridge?
Mine didn’t either. I added 2 more tablespoons and voila! Problem solved.
2 more TBS of what?
I am assuming chia seeds. 🙂
love this recipe i have made this countless times thank you
I love this Vanilla Chia Pudding! This dessert is so delicious and healthy! Thank you so much for sharing!💕
Thank you! So glad you like it!
I haven’t tried this yet, but I will soon. But quick question, is this a dish I can “meal prep” for like a few days, or something that has to be eaten within a day?? Thanks!
Yes absolutely, chia pudding is a great meal prep recipe! It will last in the fridge for at least 5 days. 🙂
I did not see the nutritional information.
Hi! What coconut milk do you use?
Hey there! I use canned coconut milk! Sometimes light, sometimes full-fat. You could also use the coconut milk from the carton if you like.
This is delicious! I use unsweetened oat milk. So good!
I’m so happy to hear! Thank you Kara. 🙂
Do you have to use maple syrup how about agave? Will it still be healthy? Have a sweet tooth.
You can definitely use any sweetener you want! It will still be healthy. 🙂
Any reason you so undairy milk? Trying with raw milk
You can use whatever milk you like.
Super Nutritional with no nutrition information. 🤔
Hi Autumn, while I don’t personally provide the exact nutrition breakdown for my recipes, I have described in the post body the nutritional benefits of the chia seed pudding. If you would like to view the nutrition breakdown per serving, you can easily input the recipe into a calculator like MyFitnessPal. 🙂
Thank you , my husband loved it !
Thanks Michelle, I’m so happy to hear!
Mine didn’t set but it tastes really good plus I added some cinnamon. Not sure how the chia seeds can absorb all the liquid to thicken it up? I stirred really well both times but still runny!
Chia seeds are high in soluble fibre, so when they combine with liquid the two mix together and create a thick, gel-like consistency. Because of their soluble fibre content, chia seeds can absorb 10x their weight in liquid! This is why they can thicken it.
Sorry yours didn’t set up – may I ask how long you let it sit?
This is my favorite chia seed recipe! Thank you!
I’m so happy to hear! Thank you!
This is a great recipe! Mine set up great and tasted great!
Thank you Teresa! So happy you enjoyed.
Is there a nutritional and caloric reading for this recipe? I just made it and waiting to see how it comes out🤞🏻

This stuff is actually so good, I make it all the time and it’s so easy. I put blueberries raspberries and strawberries in it and it’s literally the best thing i’ve eaten.
I’m so happy to hear this!! Thanks Jayce. 🙂
I am diabetic and would rather not use honey or maple syrup. How would it work with stevia or another sweetener? I tried your recipe and added sugar free jam and some granola. It was very good
Hi Karen, it should work fine with stevia instead of honey or maple syrup. Glad you enjoyed it with sugar free jam!
Love the recipes. However, where can I find the nutritional value of them?

Where are the nutrition facts for our recipes?
It turned out perfect. It’s a must to stir halfway through. It sets up perfectly! I used almond milk. Yummy breakfast topped with fruit!
Thank you Natanya! I’m so happy to hear this. 🙂
I love this chia pudding. I use a whole tin of coconut milk 398 ml with 1/2 cup chia seeds. This way I don’t have to make it so often. What I’d like to know is the amount of calcium I’m getting per servi g?
Delicious and filling.
Thank you Karen! So happy to hear.
I LOVE this! I have made it several time but my favorite way is with FairLife Chocolate Protein Shake. I make it with coconut milk as well but using Fairlife is so delish and adds 30 grams of protein and a rich chocolate taste. Thanks for posting this recipe.
Oh love the idea to use a Fairlife shake as the liquid! Going to try this!
Perfect every time!
I love mind with wild blueberries & pecans 💛
Oh that sounds great. Thanks Sarah!
I’ve made this for my daughter sauce she was 1 years old. Her and I both love it (she licks her bowl clean). We follow the recipe exactly, but double the batch for the week ahead. It sets up beautifully and is just the right amount of sweetness. I’ve recommended this recipe to friends!
Thanks so much Grace! I make it for my little one too, he loves it!
Looks yummy
Thank you!!
