Vegan Chocolate Fudge with Peppermint

This vegan chocolate fudge is a perfect holiday treat with a hint of peppermint! It's made with a handful of simple ingredients and is a source of healthy fats.

Ingredients

  • 1 cup almond butter
  • 1/4 cup coconut oil melted
  • 2 tbsp pure maple syrup
  • 1/2 tsp peppermint extract
  • 1/4 cup unsweetened cocoa powder
  • 2-3 candy canes crushed

Instructions

  • In a bowl, mix together almond butter, coconut oil, maple syrup and peppermint extract.
  • Add unsweetened cocoa powder and mix until well-combined.
  • Pour mixture into your pan of choice (I find a loaf pan works well for thick fudge pieces). Add crushed candy canes on top.
  • Freeze for a minimum of 15 minutes before cutting & serving.
