Vegan Chocolate Fudge with Peppermint
This vegan chocolate fudge is a perfect holiday treat with a hint of peppermint! It's made with a handful of simple ingredients and is a source of healthy fats.
Servings 12 squares
- 1 cup almond butter
- 1/4 cup coconut oil melted
- 2 tbsp pure maple syrup
- 1/2 tsp peppermint extract
- 1/4 cup unsweetened cocoa powder
- 2-3 candy canes crushed
In a bowl, mix together almond butter, coconut oil, maple syrup and peppermint extract.
Add unsweetened cocoa powder and mix until well-combined.
Pour mixture into your pan of choice (I find a loaf pan works well for thick fudge pieces). Add crushed candy canes on top.
Freeze for a minimum of 15 minutes before cutting & serving.
