Spicy Butternut Squash and Sweet Potato Soup

Ingredients:

Add onion and red curry paste. Then add squash, sweet potato and apple.

Pour in vegetable broth and spices. Bring the mixture to a boil.

Simmer for 20 mins, then transfer to a blender and puree until smooth.

Add coconut milk and blend again. Transfer back to pot, taste, and adjust spices as necessary. Enjoy!
