Easy Roasted Brussels Sprout Salad

Ingredients: - brussels sprouts - sweet potatoes - shallot - avocado oil - salt, pepper & garlic powder - walnuts - dried cranberries  - blue cheese

Arrange brussels sprouts, sweet potatoes, and shallots on a baking sheet and toss with avocado oil, garlic powder, salt, and pepper.

Bake in the oven at 425F for 25-30 minutes until vegetables are crisp and tender.

Meanwhile, make the dressing with olive oil, balsamic vinegar, maple syrup, dijon mustard, salt and pepper.

Whisk all dressing ingredients together in a mason jar to combine.

When the vegetables are done, top them with chopped walnuts, dried cranberries, and crumbled blue cheese.

Drizzle with the Maple Balsamic Dressing and serve immediately.
