Refreshing Watermelon Feta Salad with cucumber, cilantro and lime juice

Where are all my watermelon fans? I mean, what’s not to love about watermelon? It’s sweet, juicy and good for us! Watermelon is a good source of vitamin C, vitamin A, and yes, water.

Don’t think foods can contribute to our daily water intake? Think again. Lots of fruits and veggies contain water, and when we eat these foods, they contribute to our hydration levels.

The most hydrating fruits and vegetables include watermelon, cucumbers, strawberries, lettuce, tomatoes, cantaloupe, bell peppers and more.

Benefits of Watermelon Feta Salad:

As mentioned, this Watermelon Feta Salad contains both watermelon (duh) and cucumbers! Two of the most hydrating foods listed above.

Some studies have shown that the combination of water, electrolytes and naturally-occurring sugars in watermelon (among other fruits and veggies) may actually be more effective at hydrating people than plain ol’ water or sports drinks. Cool, huh? So don’t just drink your water, eat it too!

Not only is this salad hydrating, the cucumber also provides some soluble fibre (most of it found in the skin) which can help lower cholesterol levels and helps us feel fuller for longer.

How to Make Watermelon Feta Salad:

What I love most about this recipe is the simple ingredients and how easily it comes together.

First, you’ll want to prep your ingredients. Chop the watermelon, cucumber, and red onion first. Mix these ingredients together in a large salad bowl.

Next, add your chopped cilantro and cubed feta cheese. The salty feta cheese paired with the sweet watermelon is such a delicious combination.

Add your fresh lime juice (this acts as the salad “dressing”) and toss once again to combine. Sprinkle with salt and pepper then enjoy!

Notes About This Recipe:

Don’t have cilantro on hand? You can substitute it for fresh basil or mint! They all work beautifully with this recipe.

For a vegan-friendly version of this recipe, just omit the feta cheese or substitute with a vegan feta alternative.

Ingredients

  • 4 cups watermelon, cubed
  • 1/2 large cucumber, chopped
  • 1/4 cup red onion, sliced thin
  • 1/3 cup feta cheese, cut into 1 cm cubes
  • 2 tbsp chopped cilantro, can sub. fresh mint or basil
  • juice of 1/2 lime
  • salt and pepper, to taste

Instructions 

  • To a large salad bowl, add watermelon, cucumber, red onion, feta cheese and cilantro. Toss to combine.
  • Add lime juice and salt and pepper to taste. Toss again and serve immediately. Store salad in an airtight container in the fridge for up to 4 days.
