Tomatoes, with their bright red colour, are a nutrient-dense and deliciously juicy veggie. Tomatoes are particularly rich in lycopene, the pigment that gives them their beautiful colour. Lycopene is an antioxidant that can help protect our cells from damage. Additionally, tomatoes are a good source of vitamin C, offering 28% of the daily recommended intake per medium tomato.

One of my favourite tomato recipes is my creamy, high-protein tomato basil soup. Tomatoes are also a star in my vegetarian nachos recipe, and my veggie-packed vegetarian chili.
