Tomatoes, with their bright red colour, are a nutrient-dense and deliciously juicy veggie. Tomatoes are particularly rich in lycopene, the pigment that gives them their beautiful colour. Lycopene is an antioxidant that can help protect our cells from damage. Additionally, tomatoes are a good source of vitamin C, offering 28% of the daily recommended intake per medium tomato.
