If you know me, you know we don’t serve sad salads over here. We prefer healthy salad recipes that are vibrant, textured, and full of delicious flavours. Like my popular Kale Quinoa & Chickpea Salad with Lemon Vinaigrette, or my Quinoa Black Bean Salad with Avocado Dressing.

This recipe for shredded carrot salad with bell peppers was inspired by my quick and easy 5-Minute Ginger Soy Carrot Salad recipe. However, this one takes more like 10 minutes to make, and includes a few more tasty and nutritious goodies, including my Honey Ginger Vinaigrette Dressing. You’re going to love it!

Are There Raw Carrot Salad Benefits?

Of course there are! As a Registered Dietitian, I’m here to share those with you.

Carrots are jam-packed with beneficial nutrients. Like dietary fibre, which helps with feelings of fullness, regulating digestion, and stabilizing blood sugar levels. Carrots also offer micronutrients like vitamins A, C, and B6.

If you’re wondering about the claims of detoxifying and hormone-balancing properties of raw carrot salad, there aren’t any peer-reviewed studies that support them.

Other nutrition benefits from this shredded carrot salad recipe come from the red bell peppers, which are rich in vitamin C (more than an orange!) and have antioxidant properties. Additionally, the cashews offer satiating healthy fats and fibre too.

How to Make the Shredded Carrot Salad:

There are a variety of different ways for you to enjoy this shredded carrot salad recipe! It makes 4 side dish servings, or 2 generous snack-sized servings.

Enjoy it on it’s own for a tasty snack, or as a side dish with your lunch or dinner. And if you want to increase the protein, add some cooked edamame beans!

My personal favourite way to serve it is as a side dish with a protein (like chicken or shrimp) and rice. Here are some main dish recipes that it would pair well with:

Storing Carrot Salad Leftovers:

I will say that this specific carrot salad recipe is best enjoyed immediately. This is because of the other ingredients that the carrots are paired with, like the red bell pepper, fresh cilantro, and green onion. These ingredients can get a little soggy when they sit and soak up the dressing in the fridge.

If you do have leftovers, I recommend enjoying them within 24 hours of preparing the recipe, or storing them separate from the dressing. If the salad and dressing are stored separately in the fridge, the salad will keep well up to 4 days, and the dressing up to 1 week.

Ingredients

For the Shredded Carrot Salad:

  • 1 large carrots, peeled, washed, and shredded
  • 2 medium bell peppers, thinly sliced
  • 1/4 cup cilantro, roughly chopped
  • 1/4 cup green onion, finely chopped
  • 1/3 cup cashews, roasted and salted, chopped
  • 1 tbsp sesame seeds

For the Honey Ginger Dressing:

Instructions 

  • Add all salad ingredients to a large salad bowl.

  • Toss dressing with the salad (you'll only need about half), sprinkle salad with sesame seeds, and serve.
