Rosemary Roasted Carrots and Red Potatoes
Perfectly roasted carrots and potatoes with dried rosemary that are crisp on the outside yet tender to the bite. Ready in less than 1 hour, this is a versatile side dish that you can pair with a healthy weeknight meal or holiday feast.

In my experience, roasted vegetables are best served immediately for that crisp-on-the-outside texture. However, you can store leftovers in the fridge up to 3 days and reheat before serving.


Rosemary Roasted Carrots and Red Potatoes
Ingredients
- 2 lbs red potatoes, chopped into 1-inch pieces
- 3 large carrots, chopped into 1-inch pieces
- 2 tbsp olive oil
- 1 tbsp dried rosemary
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper, freshly ground

Instructions
- Preheat the oven to 400F and line a baking sheet with parchment paper. Add chopped carrots and potatoes to a large mixing bowl.
- Toss with the oil, garlic powder, dried rosemary, salt and pepper until coated.
- Arrange the dressed carrots and potatoes evenly on the prepared baking sheet.
- Roast in the oven at 400F for 25 minutes. Remove from the oven and toss the carrots and potatoes. Return to the oven for another 15 minutes, or until browned and crisp.




So delicious! Found after 25’ of cooking in my oven the veggies were perfect! The rosemary was so beautiful in this recipe! Will make again for sure!
