You didn’t think it would be long until I shared another overnight oats recipe, did you? I just can’t resist! This time I’m sharing the overnight oats (or ONOs, as I refer to them) that I’ve been hooked on lately this Spring.

It’s funny, I feel like an awful lot of my favourite recipes come from the need to use up leftovers. Recently I shared 3 different Naan Bread Pizza recipes – one of them being a Hawaiian BBQ Pizza – which required the use of pineapple chunks. Once the pizzas were made, I had a small container of leftover pineapple chunks remaining that I needed to figure out what to do with.

As I began to prep my ONOs for the upcoming week, I realized that the sweet, juicy pineapple might actually taste pretty dang good in my oats – especially paired with coconut. So I prepped the oats and the next morning was highly impressed with the result. I’ve been eating at least two servings of this recipe each week since.

Eating this recipe reminds me a little of sipping a pina colada, except I’m in my city apartment in the middle of a chilly Spring rather than on a beach under the sun somewhere…but a girl can dream. So if you’re like me and want to be transported somewhere tropical, even if it’s just in your mind for a few minutes in the morning – this is a perfect way to do so.

For this recipe, I used canned pineapple chunks. Yes, the ones in juice. I tend to drain and rinse them off a little before using them, so if you don’t want the unnecessary sugar from the juice feel free to do that. Fresh pineapple works perfectly as well! Just make sure you cut it up small enough.

Ingredients

Instructions 

  • Add all ingredients to a small bowl andstir to combine. Pour mixture into an airtight container (I like to use a mason jar) and refrigerate overnight.
  • Optional: Top with more pineapple chunks and coconut in the morning. I also like to add a drizzle of almond butter for some added flavour and healthy fat. Enjoy!
