I love love love a good orzo salad. If you’re not familiar, orzo (also known as risoni) is a form or short-cut pasta that has a shape resembling a large grain of rice.

Lately I’ve been into making all sorts of fun and healthy salad recipes (especially pasta salad recipes), including a Creamy Cilantro Lime Pasta Salad, my Healthy Tuna Pasta Salad with Peas, and Pesto Caprese Pasta Salad.

I particularly love love love this orzo salad recipe because it’s quick, simple, balanced, and full of fresh flavour. I know you’ll love it too!

It’s Seriously Simple:

Don’t be fooled by the pretty pictures! This orzo salad recipe with feta and spinach is incredibly simple to make. And that starts with a super simple list of ingredients, which includes:

  • Orzo (just cook according to package directions)
  • Canned brown lentils
  • Baby spinach
  • Feta cheese
  • My 3-Minute Lemon Olive Oil Dressing (for which you only need oil, vinegar, lemon, and honey)

What makes a healthy salad? As a dietitian, I’ve put together a little formula for building a healthy and *filling* salad. This way we can make enjoyable salads that are satisfying AND good for us!

Cook, Drain, Chop, Toss:

  • Cook: The orzo according to package directions. This will take about 10 minutes after boiling a pot of water.
  • Drain: The canned lentils and rinse them off.
  • Chop: The baby spinach (or you can leave it as is) and crumble up the feta cheese.
  • Toss: The salad ingredients together in a bowl with the lemony olive oil dressing.

And that, truly, is how simple and easy it is to make this orzo feta spinach salad!

Lemony Spinach Feta Orzo Salad with Lentils

Ingredients

For the Lemon Olive Oil Dressing:

For the Orzo Salad:

  • 1 340g box orzo, cooked according to package directions
  • 1 19 oz. can lentils, brown, drained and rinsed
  • 3 cups baby spinach, (packed), finely chopped
  • 1 cup feta cheese, crumbled

Instructions 

  • Add all of the dressing ingredients together in a jar or mixing bowl. Shake or whisk together until well-combined. Set aside.

  • Add cooked orzo, drained lentils, chopped spinach, and crumbled feta cheese to a large salad bowl.

  • Pour the dressing over the salad contents and toss together well to combine.

  • Serve and enjoy! Store leftovers in a sealed container in the fridge for up to 5 days.
