Energy balls are one of my favourite easy snacks. Not only are they easy to prep, they’re delicious to eat – especially if you have a sweet tooth like me. The flavour combinations are endless, but this recipe for Lemon Coconut Energy Balls is yummy, light and perfect for spring.

How to Make Energy Balls:

I like to use a simple formula for my energy balls:

I start with oats as the base. Usually I use large flake rolled oats or quick oats. Both options work well!

Then, I add a nut butter. Not only does this provide satiating healthy fat, it helps the energy balls stick together! In this recipe we use almond butter and a little coconut oil (mainly for more coconut flavour).

Next up, a sticky sweetener like honey, maple syrup or agave syrup. We want to sweeten the energy balls up a little, and like the nut butter, the stickiness helps bind all of the ingredients together. Some recipes call for dates blended into a paste for a similar effect.

And finally, the add-ins! These are the extras that add more flavour, texture and nutrition to our energy balls. It could be things like chocolate chips or dried fruit, but in this recipe we’ll add shredded coconut, lemon zest, vanilla extract and hemp seeds.

Lemon Coconut Energy Ball Ingredients:

Making these lemon coconut energy balls is really, really simple. To a mixing bowl, we’ll add our oats, coconut, almond butter, hemp seeds, melted coconut oil, almond butter, honey, lemon zest and vanilla extract.

With a spatula, spoon or *clean* hands, mix all of the ingredients together until well-combined and sticky. Then with *clean* hands, roll the mixture into 1-2 tbsp size balls. This recipe will make about 12-15 balls depending on the size you make them.

Then, pour about 1/4 cup of additional coconut into a bowl and roll the balls in it until coated. Store in the fridge until ready to eat! See how easy that was?

Ingredients

Instructions 

  • Add all ingredients to a large mixing bowl.
  • With a spoon, spatula or clean hands, mix all ingredients together until well-combined and sticky.
  • With clean hands, roll the mixture into 1-2 tbsp balls.
  • Add 1/4 cup shredded coconut to a small-medium bowl. Roll each ball in the coconut to coat.
  • Store energy balls in the fridge. Enjoy!
