If you love all things cilantro lime, you love all things cilantro lime.

I know that cilantro can be polarizing. Some feel it tastes like soap, some will garnish their food with handfuls of the stuff and can’t get enough (it’s me, hi).

I’m such a cilantro fan that I’ve been dreaming up lots of yummy cilantro lime recipes this year. This includes cilantro lime brown rice, cilantro lime crema (for things like tacos and fajitas), and now this creamy dreamy lime and cilantro pasta salad.

You’re gonna love it.

Chickpeas in Pasta Salad?

As you can see, one of the ingredients in our pasta salad here is chickpeas. You might do a double take at first, but there’s a reason they’re in there.

As a Registered Dietitian and nutrition communicator, one of the things I aim to do is share recipes that are not only drool-worthy delicious, but also nutritionally balanced. I even wrote a whole post about making salads healthy AND filling.

Most pasta salad recipes contain just pasta and some veg. And that’s fine, but I like to add a little extra protein and fibre in there (cue the chickpeas) to make the recipe more balanced and filling. This way, you can choose to enjoy the pasta salad on it’s own OR as a side dish paired with another protein source.

The Cilantro Lime Dressing:

The real star of this cilantro lime pasta salad recipe is the creamy cilantro lime dressing.

To make it, I took my Greek Yogurt Avocado Salad Dressing recipe and omitted the parsley and doubled the cilantro. The result is the dressing we toss this salad in.

To make it, all you gotta do is pop the ingredients in a blender or food processor and blitz!

The Pasta Salad:

What’s even easier than making the dressing? Making the salad!

The only prep required of you is boiling the pasta noodles, draining the cans of chickpeas and corn, and chopping up a cucumber and a red onion.

Meal Prep and Storage:

Meal Prep: If you’re prepping the salad to have on hand for the week, great idea! You can mix everything together and either store it in one big container in the fridge and dish out as needed. Or, divide it up into meal prep containers so you can grab and go.

My one tip would be to save a little dressing to drizzle on before serving each time! This will help make sure you get some of that nice creamy texture with each serving.

Storage: This cilantro lime pasta salad recipe will keep well in the fridge up to 5 days. Make sure to store it in an airtight container!

Ingredients

For the Cilantro Lime Dressing:

For the Pasta Salad:

  • 1 375g box pasta, (short pasta like rotini, fusilli, or penne), cooked according to package directions
  • 1 19 oz. can chickpeas, drained and rinsed
  • 1 12 oz. can corn, drained and rinsed
  • 1 medium cucumber, chopped
  • 1 small red onion, diced
  • 1/2 cup feta cheese, or cojita cheese, crumbled
  • cilantro, optional, for garnish
  • lime juice, optional, to squeeze on top

Instructions 

  • Make the cilantro lime dressing by blitzing ingredients together in a blender or food processor. Set aside.
  • Combine the cooked pasta, chickpeas, corn, cucumber, and red onion together in a large bowl.

  • Drizzle with the dressing and toss until all salad components mixed are well-coated with the dressing.

  • Sprinkle the feta cheese on top and gently toss to mix it into the salad.
  • Serve with a garnish of cilantro leaves and optional squeeze of lime. Enjoy!
