What Are Rice Paper Rolls?

If you’re not familiar, rice paper rolls are a traditional Vietnamese dish. They may also be known as fresh spring rolls, summer rolls, and salad rolls. They consist of various ingredients wrapped in thin, translucent sheets of rice paper that have been rehydrated.

Rice paper rolls are typically served fresh (not fried) with a variety of vegetables, fruits, and proteins inside. This may include cucumber, carrots, mango, fresh herbs, shrimp, tofu, and more. They are then served with hoisin or peanut sauce for dipping.

My Vegetarian Rice Paper Rolls include edamame for protein, while my Tofu Rice Paper Rolls are also a great option. These chicken rice paper rolls use shredded chicken for a quick and easy protein. The chicken is paired with romaine lettuce leaves, thinly sliced red bell pepper, red cabbage, mango slices, fresh cilantro, and vermicelli noodles.

I recommend serving them with my Quick and Easy Peanut Sauce or some store-bought hoisin sauce. They make a great healthy lunch option, high-protein snack, or light dinner meal.

Are Rice Paper Rolls Healthy?

Yes, these rice paper rolls with chicken and vegetables are healthy! As a Registered Dietitian, I can’t help but acknowledge the nutritious aspect of this recipe. Here are some things that make this recipe so nourishing:

Fruits & Vegetables: These chicken rice paper wraps are full of colourful fruits and veggies. Fruits and vegetables contain the important micronutrients and antioxidants that our bodies need to support all sorts of health and body functions. Additionally, they’re a good source of fibre which helps to keep us full, support digestive health, and keep blood sugar levels balanced.

Lean Protein: Chicken is a source of lean protein. Meaning, it’s high in protein and low in fat – particularly saturated fat, making it a great protein choice. Protein not only supports our everyday body functioning, it’s a key component when building a balanced meal that helps you feel full after eating. Chicken is also a source of important nutrients like iron.

What is Rice Paper Anyways?

You might be wondering what it is the wraps are made out of anyways. Rice paper wraps are thin, translucent wrappers that are made out of rice flour, water and salt.

When they are rehydrated (submerged in water), the become softened and pliable, so we can stretch them out and wrap them around various ingredients. This creates our delicious rice paper rolls.

They don’t require any cooking, just soaking in water. If you were to deep fry them, this is how you would make crispy spring rolls!

How to Make Rice Paper Rolls with Chicken:

Making these rice paper rolls with chicken is easy! Here’s how:

Storage Tips:

Rice paper rolls are best enjoyed immediately. However, they will keep in the fridge for about a day before they start to lose their hold and become soggy. For maximum freshness, wrap the leftovers in a clean, damp kitchen towel to prevent sticking.

Unfortunately they don’t freeze well so I wouldn’t recommend storing them in the freezer.

Substitution Suggestions:

 You can really fill these tofu rice paper rolls with whatever vegetables that you have on hand. Some other great options would be:

  • Thinly sliced cucumber
  • Shredded carrots
  • Avocado slices
  • Green onion

For the chicken, I like to shred leftover cooked chicken breasts and use them in this recipe. Alternatively, you can make these with shredded store-bought bbq chicken or even canned chicken. There are so many easy options!

Easy Shredded Chicken Rice Paper Rolls

These Chicken Rice Paper Rolls are easy to make, fresh, delicious, and packed with nutrition! Ingredients

For the Chicken Rice Paper Rolls:

  • 8 6-inch rice paper wraps
  • 1 1/2 cups shredded chicken
  • 3 oz. dry vermicelli rice noodles, cooked according to package directions
  • 4 large leaves romaine lettuce, cut in half
  • 1 medium bell pepper, thinly sliced
  • 1/2 cup red cabbage, thinly sliced
  • 1 medium mango, peeled and thinly sliced
  • 1/2 cup cilantro, stems removed, can sub. with mint or basil

Instructions 

  • Place a rice paper sheet in a shallow dish of cool water and let it soak for 30-60 seconds, until it softens. Remove from water, and place on a large plate or cutting board.
  • Fill the wrap starting with a romaine leaf, then cooked rice noodles, then shredded chicken.
  • Add sliced bell pepper, red cabbage, mango, and cilantro leaves.
  • Start to roll the rice paper wrap over from one end, fold in the sides and then finishing rolling the wrap. Repeat for remaining rice paper wraps.
  • Serve with dipping sauce, and enjoy!
