Let’s be real: plain old brown rice is pretty freaking boring. Sure, it gets the job done, but it could be a thousand times better by adding just a few simple steps (and ingredients!).

That’s exactly what we’re doing here with this recipe. Combining brown rice with lime and cilantro (plus some salt and a little butter or oil) takes a pretty bland food and turns it into one heck of a healthy side dish.

AND it’ll be ready in 30 minutes or less!

Gather Up:

All you’ll need to make the lime and cilantro brown rice is a pot or medium saucepan and 5 ingredients (plus water for cooking the rice):

  • Long-grain brown rice: You can totally make this recipe using white rice if you prefer. No biggie!
  • Butter or oil: If you prefer oil, choose something mild in flavour like avocado or canola oil.
  • Lime zest: I hate zesting citrus, but using a microplane makes it better.
  • Lime juice: If you don’t have a citrus juicer, ya need one.
  • Fresh cilantro: One of the stars of this show.

That’s it! Simple, right?

Nutrition Note: A lot of people wonder if brown rice is really healthier than white. While there are some nutritional differences (brown rice is slightly higher in protein, fibre, calories, and minerals like magnesium and potassium), these differences are very quite small. As a dietitian, my tip is to think more about what you’re pairing your rice with – like veggies and protein – than which variety you choose.

The great thing about this recipe is not only how easy it is to make, but how versatile it is, too. You can serve it with:

  • A simple stir fry. I recently serve it with a super simple garlic shrimp, bell pepper, and carrot stir fry!
  • Burritos and tacos. Use the rice inside homemade burritos, or on the side with quick and easy tacos.
  • Salads and bowls! This rice would be perfect in my bean burrito bowl with mango salsa.

Easy Peasy Cilantro Lime Brown Rice

Ingredients

  • 1 cup brown rice, I use a long-grain variety
  • 2 cups water
  • 2 tsp butter, or oil like avocado or canola oil
  • 1 tsp lime zest
  • 1/2 tsp salt
  • 1/2 cup cilantro, chopped
  • juice of 1 lime

Equipment

Instructions 

  • Combine rice, water, butter (or oil), lime zest, and salt in a medium saucepan or pot.

  • Bring the mixture to a boil over high heat.

  • Once boiling, reduce heat to a simmer. Then cover, allowing rice to simmer for 20 minutes, stirring occasionally, until rice is cooked and liquid is absorbed.

  • Remove from heat and let rice sit, covered in the pot for 5 minutes before fluffing it with a fork.

  • Add the cooked brown rice to a large bowl and stir in chopped cilantro leaves and lime juice. Taste, adjust the salt, cilantro and/or lime juice, then serve.
