A Make-Ahead Breakfast Dream:

Of all my nutritious breakfast recipes, this recipe for vanilla overnight oats recipe is a dream. They’re quick to make and you can really taste the warm vanilla flavour. Plus, banana adds a natural sweetness that I know you’ll love. Like my creamy chocolate and peanut butter overnight oats, you can prep these ahead so they’re ready to grab and go in the morning.

They’re Full of Protein and Fibre-Rich:

As a dietitian, if there’s two things I encourage you to start your day with – it’s protein and fibre. Thankfully, the rolled oats in this recipe are a fibre-rich whole grain, and chia seeds add a soluble fibre boost. We also stir in vanilla greek yogurt. This not only to emphasizes the vanilla flavour in our oats, but also adds protein to keep you full. Tip: using dairy or soy milk will help with this too!

Another key ingredient: vanilla bean paste. This is key for that true vanilla flavour to come through. You can swap it for vanilla extract, but you likely won’t be able to taste the vanilla flavour as well.

Healthy Vanilla Banana Overnight Oats with Yogurt

Fibre-rich oats and chia seeds pair with sliced banana, vanilla Greek yogurt and vanilla bean paste to give these overnight oats that true vanilla flavour. Only 5 minutes of prep time!

Ingredients

  • 1/3 cup rolled oats
  • 1 tbsp chia seeds
  • 1/4 tsp cinnamon
  • 1/3 cup vanilla Greek yogurt, I use 2% but any M.F.% will do
  • 1/2 cup milk of choice, (unsweetened)
  • 1/4 tsp vanilla bean paste, can sub. with 1/2 tsp vanilla extract
  • 1 pinch salt
  • 1/2 medium banana, sliced, plus more for serving

Instructions 

  • In a medium bowl or glass jar, stir together the rolled oats, chia seeds, and cinnamon.

  • Add vanilla Greek yogurt, vanilla bean paste, and milk. Stir again until combined.

  • Lastly, add the banana slices and mash them up slightly as you stir them into the mixture.

  • Cover and refrigerate overnight. In the morning top with more banana slices and an extra dollop of yogurt or nut butter (optional), and serve.

Notes

Meal Prep and Storage:
  • These will last up to 4 days in the fridge, so you can make extra servings if you’re meal prepping breakfast for the week.
  • Make sure to store them covered or in an airtight container.
  • Add extra toppings in the morning! I like to add more sliced banana and either an extra dollop of vanilla greek yogurt or a spoonful of peanut butter.
