Vanilla Banana Overnight Oats Ingredients:

Let this dietitian break down what you’ll need to make these and why they’re good for ya!

  • Rolled oats: These differ from quick-cooking oats and I prefer them for overnight oats. They’re a whole grain and rich in fibre plus many micronutrients like magnesium, iron, and B vitamins.
  • Chia seeds: In addition to being a great source of soluble fibre and healthy fats, these little seeds are super absorbent. They help absorb the liquid in overnight oats to give us that creamy consistency.
  • Vanilla Greek yogurt: This adds protein to keep you full and energized throughout your morning. Using vanilla flavoured yogurt also contributes to the vanilla taste in our oats.
  • Milk: We need some sort of liquid (preferably a milk of your choice). I like to use dairy for extra protein, plus essential nutrients like calcium and vitamin D.
  • Banana: Adds natural sweetness, fibre, and potassium.
  • Vanilla bean paste: Now this is key for that true vanilla flavour to come through. You can swap it for vanilla extract, but you likely won’t be able to taste the vanilla flavour as well.
  • Cinnamon & salt: Just a pinch of each for some extra flavour!

Tips for Meal Prep:

  • These will last up to 4 days in the fridge, so you can make extra servings if you’re meal prepping breakfast for the week.
  • Make sure to store them covered or in an airtight container.
  • Add extra toppings in the morning! I like to add more sliced banana and either an extra dollop of vanilla greek yogurt or a spoonful of peanut butter.

Ingredients

  • 1/3 cup rolled oats
  • 1 tbsp chia seeds
  • 1/4 tsp cinnamon
  • 1/3 cup vanilla Greek yogurt, I use 2% but any M.F.% will do
  • 1/2 cup milk of choice, (unsweetened)
  • 1/4 tsp vanilla bean paste, can sub. with 1/2 tsp vanilla extract
  • 1 pinch salt
  • 1/2 medium banana, sliced, plus more for serving

Instructions 

  • In a medium bowl or glass jar, stir together the rolled oats, chia seeds, and cinnamon.

  • Add vanilla Greek yogurt, vanilla bean paste, and milk. Stir again until combined.

  • Lastly, add the banana slices and mash them up slightly as you stir them into the mixture.

  • Cover and refrigerate overnight. In the morning top with more banana slices and an extra dollop of yogurt or nut butter (optional), and serve.
