What Makes This Poppyseed Dressing Healthy?
Poppyseed dressing is traditionally made of some variety of vegetable oil, vinegar, poppyseeds, sugar, and salt. Some people also choose to make creamy poppyseed dressing with mayo and mustard.
In this healthy AND creamy poppyseed dressing recipe, we’re making some nutritious substitutions. By using Greek yogurt instead of mayo, we reduce the saturated fat content and increase the protein content of the dressing.
I make a lot of Greek yogurt recipes because its a great way to maintain a creamy texture in things like smoothies, sauces, dressings and dips, while also boosting the content of protein, calcium, riboflavin, and more.
In addition to Greek yogurt, the ingredients in this recipe are quite simple and wholesome. Olive oil adds heart-healthy fats, while a touch of honey adds sweetness. Dijon mustard helps to emulsify the fats, and the apple cider vinegar gives it tanginess.
What Are Poppyseeds and Why Use Them?
Besides Greek yogurt, the star of this creamy poppyseed dressing recipe is, of course, poppy seeds. I’m sure you’ve heard of poppy seeds before, but you may not be familiar with what they actually are.
Poppy seeds are the edible seeds of the opium poppy. Poppy seeds are often used in recipes for things like baked goods, because they add a slightly nutty flavour, a crunchy texture, and unique decoration.
Besides being used for texture in things like baked goods and salad dressing, poppy seeds do offer some nutritional value as well. 1 tablespoon of poppyseeds offers 1.7 grams of dietary fibre, 3.3 grams of healthy fats, and 12% of the daily recommended value for calcium.
