Cauliflower is having a moment. It’s been used to make pizza crust, ‘rice’, mashed potatoes, and more. As a Registered Dietitian, I love that this once overlooked veggie is finally getting some credit, and I can see why.

It’s white colour helps it blend in to just about anything, and it’s mild flavour means you can hide it in dishes without even noticing it’s there!

I particularly enjoy making smoothies with cauliflower! Adding it to your smoothie is an easy way to add an extra serving of vegetables to your day, and when it’s frozen it lends a nice creamy texture to your smoothie.

Not only is it creamy, chocolatey, and delicious..this Chocolate Cauliflower Smoothie recipe is nutritious and balanced, too!

If you’re going to enjoy a smoothie in place of a meal, you want it to contain everything that a balanced meal would. To build a balanced meal, you want to include all three macronutrients (a carbohydrate, a protein, and a fat) as well as at least one (or more) servings of vegetables and/or fruit.

Luckily, this smoothie contains all of the above, so it makes a great breakfast or snack that will energize you and keep you feeling full and satisfied.

And by adding a servings of veggies like cauliflower, we’re adding important nutrients like fibre, vitamin C, and potassium.

Should I Use Raw or Cooked Cauliflower in my Smoothie?

You can use either raw or cooked cauliflower in your smoothie. I generally use frozen (but raw) cauliflower in my smoothies. I purchase a bag of frozen cauliflower at my local grocery store and keep it in the freezer for the purpose of adding to my smoothies.

Some people prefer to use cooked (then cooled or frozen) cauliflower in their smoothies. This is also fine, but I’d make sure that there is no oil, salt or seasoning added to the cooked cauliflower as this will alter the taste of your smoothie.

I typically recommend frozen cauliflower over room-temperature because it adds a cold, creamy texture to the smoothie when blended up.

Ingredients for this Creamy Chocolate Cauliflower Smoothie:

To make this Creamy Chocolate Cauliflower Smoothie, you’ll need:

  • Frozen cauliflower
  • Banana (fresh or frozen will work)
  • Chocolate protein powder (I use this one)
  • Almond butter
  • Milk of your choice
  • Dates
  • Vanilla extract
  • Salt

How to Freeze Cauliflower for Smoothies:

If you prefer to freeze your own cauliflower, you can do this easily in a few simple steps.

  1. Start by washing and then cutting your cauliflower into florets (or purchasing it pre-cut).
  2. Arrange the florets in a single layer on a baking sheet and freeze for 1-2 hours.
  3. After 1-2 hours, transfer the frozen cauliflower florets to a freezer bag and place back in the freezer.
  4. You can store the cauliflower in the freezer like this up to 2 months. For longer freezing you can blanch the cauliflower florets prior to freezing.

Tips for Making the Best Cauliflower Smoothie:

  • Use frozen cauliflower for your smoothie. This will make the smoothie extra smooth and creamy when blended.
  • Add some sweetness. This is why I’ve added a date as well as a banana to this smoothie recipe – for natural sweetness.
  • Use plenty of liquid! Don’t be afraid of adding a little extra milk (or whatever liquid) to your frozen cauliflower smoothie. Cauliflower is a tough vegetable, and in order to blend it up well you will need to use plenty of liquid.
  • This recipe is naturally vegetarian and gluten-free. To make it vegan, use a plant-based protein powder and non-dairy milk.
