If you love a good taco night like me (okay, who doesn’t?), you have to add this super quick and easy lime and cilantro slaw to your taco night spread.

I originally created this recipe when I shared my shrimp tacos with cilantro lime slaw. The goal was to add flavour and texture (hello, crunch!) to the tacos plus some extra veggies – without hassle or extra cook time.

And that’s why this recipe is so perfect! You only need 4 simple ingredients and 2 minutes to whip it up. Plus, the veggies in the slaw add fibre and vitamin C to your meal. That makes my dietitian heart happy!

Of course, my favourite way to serve this no-mayo cilantro lime slaw is with tacos. Preferably ones with fresh flavours like shrimp tacos or fish tacos.

Another awesome way to enjoy the slaw would be as a base for a burrito/taco bowl, with rice (cilantro lime rice would be bomb), protein, and my 3-minute sriracha mayo.

Lastly, in a pinch it can work as a side dish or super simple way to sneak in some veggies (treat it like a salad!) if you’re feeling lazy.

Ingredients

  • 4 cups coleslaw mix, any store-bought coleslaw mix will do (cabbage slaw, broccoli slaw, kale slaw, etc.)
  • 1 cup cilantro, stems removed, roughly chopped
  • 2-3 tbsp lime juice, or to taste
  • salt and pepper, to taste

Instructions 

  • In a medium mixing bowl, toss together the coleslaw mix, chopped cilantro, lime juice, salt and pepper until well-combined.
