Its all cooked in the oven on a single sheet pan, and served with a quick and delicious avocado cilantro lime sauce.

Are These Healthy Chicken Fajitas?
As a Registered Dietitian, one of my goals is to share simple and healthy recipes that are just as delicious as they are easy to make. These sheet pan fajitas check those boxes! Let me tell you why.
- They’re high in protein. Chicken is a fantastic source of lean protein (meaning its low in saturated fat). In addition to protein, chicken offers key micronutrients like iron, vitamin B12, and vitamin B6.
- The veggies add important nutrients. Bell peppers are rich in vitamin C (they contain more than oranges!). Not only is vitamin C key for functions like maintaining a strong immune system, it also helps our bodies absorb the iron we get from the chicken in this recipe! Neat, right?
- They’re lower in sodium than fajitas made with packaged fajita seasoning. Most of the sodium in the North American diet comes from packaged foods. Making our own fajita seasoning (it’s super easy, I promise) tastes just as good, with way less sodium.
- The avocado cilantro crema adds healthy fats. To create a balanced meal, it’s important to consider a source of healthy fats. Luckily, the avocado cilantro sauce on these fajitas is rich in monounsaturated fats, thanks to the avocados!
Fajita Ingredients:
To make these one-pan chicken fajitas, you’ll need:
- chicken breasts
- bell peppers
- yellow onion
- olive oil
- homemade fajita seasoning (or a packet of seasoning)
- flour tortillas
For the avocado cilantro lime crema, you’ll need:
- avocados
- plain greek yogurt
- cilantro
- lime juice
- sriracha

How to Make Homemade Fajita Seasoning:
To make the homemade fajita seasoning, just combine all of the fajita seasoning ingredients together.
Avocado Cilantro Lime Crema:
Preparing the Avocado Cilantro Lime Crema takes less than 5 minutes, and you can do it while the chicken and vegetables bake.
Is this Recipe Gluten-Free?
This recipe is entirely gluten-free, except for flour tortillas. So if you have celiac disease or you follow a gluten-free diet, I’d recommend substituting flour tortillas with a gluten-free option that works for you.
The fajitas recipe is dairy free with the exception of the cilantro avocado sauce, which does contain greek yogurt. If you are dairy-free, I’d recommend just omitting the yogurt in the sauce and adding an extra avocado.

Storing Leftovers:
If you have leftovers, I recommend storing the fajita mix (chicken, peppers and onions) separate from the avocado cilantro sauce. Store each in separate airtight containers in the fridge. The fajita mix will keep up to 4 days, and the sauce will keep up to 1 week (though it may brown slightly due to oxidation).
For the tortilla shells, keep sealed in their packaging in a cool, dry place. To keep them for longer, you can store them in the freezer.

30-Minute Sheet Pan Chicken Fajitas with Avocado Cilantro Lime Crema
Ingredients
For the Sheet Pan Chicken Fajitas:
- 2 lbs chicken breasts, boneless and skinless, approx. 3 medium chicken breasts
- 3 medium bell peppers, of any colour
- 1 medium yellow onion
- 2 tbsp olive oil
- 1 batch homemade fajita seasoning
For the Avocado Cilantro Lime Crema:
Optional Toppings:
- cilantro
- lime juice
- shredded cheddar cheese
- salsa
Instructions
- Preheat oven to 425F. Slice chicken breasts, bell peppers, and onion into strips.
- Transfer vegetables to a parchment-lined baking sheet and arrange sliced chicken on top.
- Drizzle chicken and vegetables with olive oil and season with fajita seasoning. Toss to coat, and spread mixture evenly on the baking sheet.
- Transfer to the oven to bake at 425F for 15-20 minutes, until chicken is cooked and vegetables are tender.
- Meanwhile, prepare the Cilantro Avocado Crema by adding all ingredients to a blender or food processor and blending until smooth and creamy.
- Assemble fajitas on tortillas with cilantro avocado crema and chicken and vegetable fajita mix. Add any other toppings you like, then enjoy!
