This Healthy Chocolate Peppermint Fudge is a perfect healthy holiday treat! It's made with a handful of simple ingredients and is a source of healthy fats. Vegan and gluten-free.
In a bowl, mix together almond butter, coconut oil, maple syrup and peppermint extract.
Add unsweetened cocoa powder and mix until well-combined.
Pour mixture into your pan of choice (I find a loaf pan works well for thick fudge pieces). Add crushed candy canes on top.
Freeze for a minimum of 15 minutes before cutting & serving.
